Cooking Up a Few Good Stocks

Using good flavored stocks is a staple in many dishes. It's also a base for many soups. Here a few ideas and recipes to get you started


Chicken Stock
This is a very versatile stock and is easy to make.

Yield: 2 quarts (appx.)

Ingredients:

3 Qt. Water
3-4 Lb. Chicken, cut into quarter or halves (to fit into your pot), well rinsed
2 Onions, large, chopped
3 Celery stalks with leaves, chopped
5 Parsley Sprigs, cut up (Dried parsley flakes can be substituted)
2 Carrots, chopped
1 ½ tsp. Salt
½ tsp. Pepper
3 Bay Leaves
1 Rosemary "branches", chopped (Dried & crushed rosemary can be substituted)
2 Cloves Garlic, crushed (Garlic powder can be substituted
1 Tbsp. Worcestershire Sauce
1 Tbsp Olive Oil (Other oil can be substituted)

Steps:

1. Put oil and vegetables in large pot and sauté until soft. Bring to a boil
2. Add water, chicken pieces and all spices. Reduce to a simmer.
3. Cover pot partially and allow it to simmer for about 3 hours.
4. Remove chicken and allow it to cool.
5. Taste the stock and if not flavorful enough, simmer it for another 30 minutes or so.
6. Strain the stock. Chill in airtight jars until ready to use, or freeze in airtight containers
7. Remove the fat from the top of the stock just before you use it.


Light Stock
Use this in a consommé, or a light soup, or as the base for a sauce. It's traditionally made with veal bones, but you can use lamb, ham, or chicken bones instead.

Yield: 1 Gallon

Ingredients:

. Water, enough to cover all bones in your pot)
6 Lb. Ham, Lamb, Veal or Chicken bones
2 Onions, large, chopped
3 Celery stalks with leaves, chopped
8- 10 Parsley Sprigs, cut up (Dried parsley flakes can be substituted)
2 Carrots, chopped
1 Tbsp. Olive Oil (Other oil can be substituted)
1 ½ tsp. Salt
½ tsp. Pepper
2 Garlic Cloves, crushed (Garlic Powder may be substituted)
1 Tbsp. Worcestershire Sauce
5 Bay Leaves
2 Rosemary "branches", chopped (Dried & crushed rosemary can be substituted)

Steps:

1. Put bones and vegetables oil in a large pot and cover with water. Bring to a boil.
2. Skim off the scum from the top and add all spices. Reduce to a simmer.
3. Cover pot partially and allow it to simmer for about 3 hours. Remove the scum as needed
4. Remove bones and allow stock to cool.
5. Strain through a fine-mesh strainer lined with three or four layers of cheesecloth. Push ingredients through the cloth and strainer with a large spoon
6. Let stock completely cool and remove any fat from the surface.
7. Chill in airtight jars until ready to use, or freeze in air tight containers


Beef Stock
This is a very versatile stock but takes longer to make than chicken or light stock

Yield: 2 quarts (appx.)

Ingredients:

3 Qt. Water
5 Lb. Beef bones with meat on it, trimmed to remove any fat
1-2 Lb. Beef -any kind of uncooked beef except ground beef (stew meat, pieces of roast, etc.)
1 Carrot, chopped
2 Onions, large, chopped
2 Celery stalks with leaves, chopped
5 Parsley Sprigs, cut up (Dried parsley flakes can be substituted)
1 Tomato, chopped
2 tsp. Salt
¾ tsp. Pepper
5 Bay Leaves
2 Rosemary "branches", chopped (Dried & crushed rosemary can be substituted)
2 Cloves Garlic, crushed (Garlic powder can be substituted
1 Tbsp. Worcestershire Sauce
1 Tbsp. Olive Oil (Other oil can be substituted)

Steps:

1. Place the beef bones only (not the meat) onto a baking pan, (do not use foil) and put the pan into the oven at 400F and bake for about 10 - 12 minutes, being careful it does not burn.
2. Put the oil into the pot and heat. Once heated, add the onions and sauté, stirring constantly.
3. Add the carrots and once caramelization has begun, add the tomato
4. Once the vegetables have gotten a fairly dark caramelized color, add the celery.
5. Remove the bones from the oven, discarding any burn sections and add with the extra meat to the pot.
6. Add water to cover the bones, meat and vegetable. Add all remaining ingredients and bring to a boil.
7. Reduce to a simmer, partial cover the pot and let simmer for about 7 hours
8. Your baking sheet tray now contains particles from the bones and trim that have dripped out onto the bottom of the pan. Add a little water and place on your stove on low heat. Gently scrape the dripping and mix with the water. Add this mixture to your simmering pot of stock.
9. Occasionally skim the fat from the surface of the stock. Add water as necessary to keep the bones, etc. completely covered.
10. Remove from heat and allow the liquid to cool. Strain and chill in airtight jars until ready to use, or freeze in air tight containers

There were remarks earlier in the week from former Fed Chairman Alan Greenspan, warned that a U.S. recession could take hold this year. Greenspans remarks may have contributed to Tuesday's declines.

A Commerce Department report that the U.S. economy grew at an annual rate of 2.2 percent in the fourth quarter. The reading of the gross Domenic product was slightly below expectations, but they were not as low as some investors feared they would be.

Bernanke's comments and the GDP report helped depressed stock prices look a little more attractive. "It's typical that you get a bounce back the next day,; said Joseph V. Battipahlia, Chief Investment Officer and Ryan Bect & Company "Now we're essentially flat on the year. Can we go up from here or down? That sorting-out process will continue now."

According to NASDAQ, Bernanke reassured investors, saying "there didn't seem to be any single trigger for Tuesday's sell-off. He also noted that financial markets "seem to be working well" and that there has been "no material change" in the Fed's expectation for the U.S. economy. In fact, he said today's downward revision of Q4 GDP is "More consistent with our overall view of the economy" than the original report and that there's a "reasonable possibility" that the economy will show signs of strengthening as the year progresses.

"The Fed Chairman also put to rest concerns about sub prime mortgage lending spreading into the broader economy and said he sees no liquidity problem. Both items contributed to yesterday's widespread panic, and have provided an added sense of comfort for bargain hunter believing the sell-off was overdone." According to NASDAQ

NASDAQ reported that Wireless Services were the day's best performing S&P Industry group. Investors applauded Sprint Nextel which showed a 33% rise in their fourth quarter profits.

The biggest gain in the Dow was by Proctor and Gamble, which soared nearly 4 percent. Pharmaceutical maker Merck rose 2 percent after raising its full year earnings forecast. American Express jumped 2.3 percent.

Home builder shares fell amid concerns about the housing slump. New home sales experienced their steepest plunge in 13 years in January, according to a government report. The rising glut of new houses on the market pushed prices lower.

The Commerce Department said gross domestic product, which is the nation's broadest measure of the nation's economic activity, rose 2.2 percent in the fourth quarter, versus an earlier estimate of 3.5 percent growth.

The China Shanghai Composite Index fell nearly 9 percent Tuesday. The China Shanghai Composite Index showed a recovery today, helping to boost U.S. stocks.

In the long run however, it's definitely worth your time.

2. Ask friends. Ask Anyone. This is the thing about human beings; they like people to know that they know stuff. Millions of people spend hours and hours learning the stock market and will be anything but bored/annoyed if you ask them to drop you some tips. In fact, a great many have been waiting decades for someone to give them an excuse to rant and rave about their theories and rights and wrongs. It's a win-win situation for wealthy nerds and cool poor people alike.

3. Don't read too much. Seriously. Don't make it boring. Trading stock isn't hard at all. What is hard is sifting through dusty textbooks (and worse, poorly written ebooks) that ramble on and on about every single aspect of the stock market even though you just wanna know about the things you plan on doing. It's a lot more effective to use trial and error methods (via practice websites) and ask specific questions (via other people) than to sit down and read the whole damn stock market. This is one of those fields that's so immensely gigantic and complicated that you'll just end up burned out and stick to your dayjob if you 'force yourself'. Even the most basic, simple jargon (IPOs and preferred stocks and bears and pigs and zebras) can bore a newcomer to tears. Learn these things as they become relevant rather than torturing yourself.

4. Ignore 99% of the 'expert writers'. It's hard to think of stuff to write about. Really. In fact, it's harder than trading stocks. That's the thing about 'expert financial writers'. If they just repeated factual and useful information over and over, they wouldn't have a job. You can get that stuff by reading FAQs and government documents from 30 years ago. Instead, they're forced to churn out risky theories, attempt to debunk established methods, and anything else just to give their name some momentum. It's painful to see an dead-obvious stock climbing at an insane rate right as the markets are opening, throw $5,000 at it then sell, making more on it than you did at your 9-5 that day, then finding some 'expert' telling people to do the exact opposite with a bunch of pie charts and Freud quotes. These guys intentionally make the stock market out to be more mysterious than it is because, simply put, they need something to write about.

And that's it. Give it some time and jot down any patterns you notice while playing practice markets. As soon as you punch some basic math and develop an investing method that leans profit odds strongly in your favor, you won't be able to wait to use real money instead of the play stuff. Keep your initial expectations low - just managing to play around and study until you're pulling a consistent $10 a day means you've gotten the fundamentals down and can gradually risk more and more.

For the most part, handicapped people face insurmountable obstacles in the field of athletics. Quadriplegics can't play contact sports. Those who are simply paralyzed from the waist down can certainly shoot a basketball or swing a bat, but you won't see Stephen Hawking fielding for the Boston Red Sox anytime soon. There aren't many sports that grant disabled individuals fair treatment and the opportunity to compete against able-bodied athletes on a level playing field. Except for bowling!

Bowling is a rarity amongst leisure pursuits. Families can engage in the exact same activities as the professionals, and they can do it in the exact same environment. You can't say that about many other sporting events. That's not to disparage professional bowlers. My point is that bowling does not discriminate against body type. Handicapped people have been bowling since the 1940's when injured World War II veterans would bowl as a form of rehabilitation. Over the decades, it has become incredibly easy for someone as handicapped as myself (click HERE to read about my disability) to bowl. Furthermore, it has become quite possible for a severely handicapped person to hold down an average of over 200.

There are several ways for quadriplegics, amputees, and invalids to bowl. A snap-handle bowling ball features a spring-loaded handle that snaps back into the ball after it is released. A stick similar to a shuffleboard stick can also be used to propel the bowl down the lane. My method of choice involves a ramp. Bowling ramps vary in shape and size, but their basic function remains the same with each model. Most people assume that bowling with a ramp is as simple as pushing the ball down the center of the lane. Oh, how I wish it was that simple. There is a right way and a wrong way to bowl with a ramp if you are not physically able to hold a ball.

I am not a professional bowler, but I love to bowl. I'm also pretty good. My high score is 214, and my average falls at around 160. Handicapped bowlers have scored a perfect 300. Again, it's not a matter of aiming down the center of the lane. I'll usually have someone with me (herein referred to as an assistant) to position the ramp and to place my hand on the ball. As for the ball itself, it's best to have one in between 14-16 pounds when using a ramp. The grip holes have an affect on which way the ball will curve. And it will curve. It's nearly impossible to launch a straight shot with a ramp. The ball will never go fast enough for the grooves of the lane to become irrelevant. Any and all chinks in the lane will disrupt the course of the ball.

After you have observed how your ball is responding to the lane, make the appropriate adjustments. You may find that leaving the grip holes facing left or right will help you put the ball where you want. It's never a wise idea to let the ball roll over the holes. Be sure to be as specific as possible when giving instructions to your assistant. Bowling is a game of centimeters. Have your assistant hold the ramp steady as you push the ball down the ramp. If you're using one of the ramps that the bowling alley has provided, chances are, it will be jarred by the ball's momentum.

Pay close attention to where the end of the ramp is sitting. You will have to use dots and arrows as reference points, just as you would if you weren't handicapped. Mind the distance between the lane and the ramp. If this distance fluctuates, it will be difficult to bowl with any kind of consistency. Mark the lane if you have to. If the ramp is stationary, it will be easier to hit a succession of strikes. Pushing the ball with greater force will keep the ball from curving as much as it would normally. At times, this is barely noticeable. The way you push the ball down the ramp does factor into the ball's movement, though. You can even put a delicate spin on the ball if you've got the skills.

Most handicapped bowlers find that using rubber bumpers is an unavoidable necessity. Since ramps don't allow for high velocity, tripping pins on either side of the lane to pick up a spare can be trying. For the most part, I have to use bumpers, but with practice, I hope to rid of my training wheels. Other accommodations are crucial in order for me to light up a lane. If you're bowling with a group, ask if you can bowl five frames at a time. Getting your wheelchair and the ramp into position will slow down the game. This will also ensure consistency, as you will be able to keep your ramp in one place. If you bowl in a league, they may not allow such an accommodation, but it's worth inquiring.

Hopefully, these tips will help you better your bowling if you live with a disability. There are more wheelchair bowlers out there than one might think.
